USDA SuperPrime is the highest grade of US beef and is awarded only to the top 1% of all beef produced in the USA. This grade is not available in supermarkets or ordinary butcher shops ; even most restaurants do not carry this grade. You will immediately notice the immaculate marbling permeating through the steak.
This particular cattle has been grain fed which leads to a more buttery and sweet flavor profile.
Due to the quality and robustness of this meat, we are able to have a slightly longer age of 45 days. This elevates the meat's inherent tenderness, developing strong notes of nuts and a perfume of parmesan and blue cheese.
